Melons Stuffed With Fruits & Vegetables Recipe
Ingredients:
3 small-sized melons (or cantaloupe)
1/3 c of oil
3 c of rice (cooked)
2 c of carrots; slice thinly
2 Tbsps of seedless raisins;
Salt and pepper to taste
1 c of apples (green); diced
1 c of onions (green); chop green parts
1 Tbsp oil
1/2 c of rind (lemon)
2 Tbsp nuts (pine)
Instructions:
Slice melons into two, remove seeds then scoop fruit meat and set aside. Using a skillet, heat oil then saute carrots adding salt and pepper to taste, apples, onions then rind (lemon).
Cook til apples soften, then allow to cool down. Set oven up to 325 degrees F. Combine rice with earlier mixture then stuff this in the melon skin set aside. Dice 2 cups of melon meat and top the mixture.
Put in oven for twenty minutes then top with browned nuts (pine) then serve.
