Meatcakes With Dried Fruits Recipe
Ingredients:
13 ozs of all purpose flour
1 pc egg
3 1/3 lb of pork shoulder; cut in cubes
6 ozs of butter
1/4 oz of salt
1 Tbsp of water (cold)
1 tsp of sage powder
1 tsp of nutmeg
9 ozs of chopped dates
2 Tbsps of chopped parsley
2 ozs of chopped pistachios
1 tsp of salt
3/4 c of cream
9 ozs of raisins
1 tsp of ground ginger
2 ozs of sugar
7 pcs egg yolks
A pinch of saffron (mixed with 1 Tbsp of water)
Instructions:
Dough – Combine flour with salt then add butter using the hands to blend til dough becomes lumpy.
Break egg in mix, then add cold water (more if needed) and knead lightly. Keep dough wrapped in the refrigerator of about an hour then roll.
Filling – Boil pork in water then simmer til soft and tender. Strain broth (1 1/4 cup) then add sage, parsley then boil again.
Add in pork, raisins, dates, then pistachios and stir. Remove from heat then mix sugar, egg yolks, salt, cream then remaining ingredients then whisk.
Line cakepans using wax paper then rolled dough. Set oven to 375 degrees F then bake for ten minutes. Add meat mixture. Cook for another forty minutes, let it cool down five minutes then serve.
