Fruited Spinach Salad Recipe
Ingredients:
1/4 c of vinegar or wine (white)
2 Tbsps of honey
3 Tbsps of salad oil
1 tsp poppy seeds
1/2 tsp dry mustard
8 c of fresh spinach; tear
1 medium-sized papaya
1.5 c of seedless grapes; cut in half
Instructions:
Mix all ingredients and toss well in a salad bowl. Chill before serving.

Capetown Fruit & Vegetable Curry Recipe
Ingredients:
4 c of onions: chopped coarsely
2 cloves garlic; minced
1.5 Tbsps of cumin seed (ground)
1.5 tsps of cinnamon
1/2 tsp of cayenne
1/4 tsp of cardamom (black)
2 zucchini (medium); quartered and sliced
1 c of beans (green)
2 cored tart-apples; cubed
1 c of dry apricots; chopped
1/2 c of strawberry preserves
Freshly squeezed juice of lemon
1/2 c of raisins
1/4 tsp of powdered cloves
1/2 of red bellpepper
1.5 c of water
1/2 tsp of fennel seed
1 tsp of turmeric
1.5 Tbsp of powdered coriander seed
1 tsp of freshly grated ginger
2 Tbsps of oil (peanut)
Instructions:
In heated oil, have your onions sauteed for around 10 mins. Add in ginger, curry and garlic spices. Saute & constantly stir for every 3 mins.
Add zucchini in water then stir it well to avoid pieces sticking into pot. Have it covered then simmer it for ten minutes. You blend in beans, apricots, peppers and apples.
Gently simmer, covered about thirty minutes. Occasionally stir, adding enough water as necessary. Once the fruits are nit tender, add your raisins in, strawberry preserve and juice.
