Burmese-Style Coconut Spiced Fruit Rice Recipe
Ingredients:
1 tsp of oil (vegetable)
1/2 c of water
4 Tbsps of coconut; grated
3 bayleaves
1/4 tsp of powdered curry
1/4 tsp of powdered cloves
1/4 tsp of turmeric (ground)
1 c of onion; chopped
4 c of unseasoned white-rice; cooked
1 tsp of cinnamon powder
Pepper
Salt
Instructions:
Combine 2 Tbsps water, oil & onion in a large stick-free skillet. Place over high-heat & cook, stir occasionally ’til water will evaporate & onions are slightly browned.
Pour in rest of the water & as well as all remaining ingredients. Adjust heat and have it covered. cook ’til well-heated. Remove the bayleaves before you serve the dish.
