Basmati Rice With Nuts & Dried Fruit Recipe

Ingredients:

1 & 1/2 c of uncooked rice (Basmati)
1 onion (small); sliced thinly
2 tsps of garlic (minced)
1/2 tsp of garam-masala
A pinch of pepper (white)
3 c of chicken stock
1/4 c of walnuts; toasted & chopped coarsely
1/4 c of prunes (pitted)
2 Tbsps of coconut ; toasted
1/4 c of plum-sauce
2 Tbsps of chopped onion (green)
1/4 c of cashew’ toasted and cut into half
1/4 c of apricots (dried)
1/2 tsp of salt
2 Jalapenos; chopped
1 Tbsp of ginger; minced
2 Tbsps of oil

Instructions:

Have rice soaked in some water then cover it for about 30 mins. Drain once done.

You heat 3-qt pan placed over mid-heat ’til well-heated. Add oil then saute onions for 1 min or ’til slightly browned. Add garlic, ginger, garam-masala, pepper, salt & ginger. Stir for ten seconds.

You add in soaked rice then cook, stir for a minute, ’til mixture gets well-coated w/ oil. Pour broth in and let it boil. Have it cooked without cover over mid-heat ’til liquid is about rice level.

Reduce heat then cover & allow to simmer over low-heat for 15 minutes, ’til rice turns tender. Transfer rice into serving plate then sprinkle it w/ nuts, apricots, coconuts and onions.

Pass around plum-sauce w/ the dish.
